Tasty Meal

Tonight's dinner was... Greek style pizzas with feta cheese and hummus! I have no idea where I got the recipe, but it is one of Luke's favorites, so I figured I should pass it on.

You will need:
Pitas (homemade are best... but they are also a pain to make)
Hummus
Feta Cheese
Baby Spinach Leaves (or fancy mixed lettuce)
Onion, sliced thin
Tomato, diced or sliced

Spread the pitas with hummus and sprinkle with a layer of feta cheese. Put them on a tray and heat them until the cheese is a little bit melted. Top with spinach/lettuce, onion, and tomatoes. Serve & enjoy! They are actually quite filling :)

Brittany, I hear there's some important game on TV right now, but instead of watching, I'm making this meal for myself while my husband and kids watch the game with his family. Our grocery store stopped carrying hummus, so I skipped it, I'm adding black olives. I think it sounds delish! Thanks for the recipe!

Reporting back to say that is really a great dish! It's so colorful, healthy and EASY!
